Session Topics

Session 1
Keynote –Joe Pawlak, Technomic  Inc. Mr. Pawlak will present North American demographic and menu trends for the next decade-plus.

Session 2
How Efficient Can You Get?—Bing Liu, project manager for Pacific Northwest National Laboratory. Ms. Liu will provide an overview of how much energy foodservice  operations typically can save, and in which categories and areas of operation—HVAC,  cooking, refrigeration, lighting, etc. The presentation is based on findings in PNNL’s “50% Energy Savings For Quick-Service Restaurants” DOE study, but with emphasis on implications for ALL types of foodservice.

Session 3
LEED, An Orientation—Richard Young, PG&E’s Food Service Technology Center. Mr.  Young offers a strategic look at LEED, with an emphasis on new LEED provisions that offer special value to foodservice operations.

Session 4

Specifying The Efficient Kitchen—Richard Young, PG&E’s Food Service Technology Center. Mr. Young tightens the focus to kitchen equipment specifying, with an orientation on ASTM test standards, how broadly results can vary from model to model,  and a look at Energy Star, CEC, making the most of rebate programs, etc.

Water: The Oil of the 21st Century—H. W. (Bill) Hoffman, P.E., Senior Technical Advisor, Water Management, Inc., Austin, Texas. Mr. Hoffman underscores the point that water costs have risen faster than oil prices over the past 30 years, with an analysis of costs from water to wastewater to chemical treatments and by operations from warewashing to bathroom water and landscaping.

Session 6

Refrigeration’s Shifting Technologies—Craig Raney, director of marketing, refrigeration, at Emerson Climate Technologies, will discuss advances in refrigeration system components as well as the changing landscape in energy consumption and the coming generation of new refrigerants.

Session 7

Trends in Innovation—Kitchen Innovations Awards judges Dan Bendall, Robert Forrester, Aaron LaMotte. Panelists talk about technology and design trends emerging in recent years of the National Restaurant Association’s KI awards program.

Session 8

Roundtables—Most table topics based on MUFES seminar sessions.
