SPECIAL REPORT:
Tracking the Cutting Edge

SELF-CHILLING BOWLS MAKE BUFFETS A BREEZE

Imagine you’ve laid out a beautiful buffet. Your lovely food is ready to go when you hear that the guests are delayed, or the air conditioning goes out. And then your beds of ice start melting into puddles and your beautiful food slips quickly toward the temperature danger zone. Problems like these could be a nightmare for you, but not if you’re using the Satellite Cooling System. This innovative cold buffet system links together up to eight continuously cooled bowls or platters, which keep their cool thanks to a remote glycol chiller. This chef-designed arrangement gives you total flexibility in table or countertop arrangements, as well as extended food life and no need for ice. The easy-to-clean containers are made of “high polish” black plastic with bright anodized conductive interiors, and they’re sized to hold standard trays and bowls. NSF approved.

HELP YOUR FRYER OIL LIVE LONG AND PROSPER

Where food is concerned, oxidation is generally Not A Good Thing. (Brown apple slices, anyone? Or brown guacamole?) The same holds true for your fryer oil, and that’s where Rejuvenoil can help. Created in Japan, the device uses small semiconductors inserted into each fryer bank. The semiconductors generate negative ions, which reduce oil oxidation by slowing the formation of oil-ruining “free fatty acids.” As a result, your food will taste better and stay crisp longer; you’ll save money by doubling the oil’s useable life; and you’ll reduce the smoke and odors that come with oil oxidation, says the company. For installation, mount the compact control box near the deep fryer, connect the semiconductor units to the two flexible cords, place them in the oil wells, and plug in the AC power plug. Available in four models, ranging in oil capacity from 6 lbs. to 100 lbs. Free fatty acids, be gone!

INFINITE JOY, INFINITE DISPLAY

So you’ve got a great new merchandising idea for your chain of restaurants, but to implement it, you have to find an attractive, consistent counter display for all your stores that’s not going to break the bank. Bonus points if the system can ship flat and be assembled with no tools. Well, you’re in luck: The GRS Infinite Panel System from Ideas Well Done could be just what you need. With GRS, a basic building-block system of connectors, rails and panels, can be infinitely customized to meet your needs. You can create unique counters, stands, kiosks, displays and furniture, all to match existing décor. And should colors change down the road, it’s easy to take the unit apart and put in new panels. Patent pending.

NO EXCUSES FOR DIRTY HANDS

Tired of hearing excuses for why staffers don’t wash their hands properly? Here’s a cool new innovation, which just began shipping in March 2006: San Jamar’s Kleen-Brush fingernail brush-and-holder. The device attaches to any gooseneck faucet. Suddenly the brush is right there, handy, and it’s held in a way that helps keep it clean. Not to mention that it’s right under everyone’s nose, where it can’t be ignored. The brush is easily rinsed within the faucet stream, and when it’s time for more serious cleaning, you just whip it into the warewasher. The holder swivels on the faucet for right- or left-hand setup, and it pivots out of the way for the hand washing, then down to put the brush to work. Works with many different brands of nail brushes.
