MAKING THE SWITCH TO BRAISING
When Maid-Rite switched from pre-cooked, rethermed ground beef for its signature loose meat sandwiches to beef prepared daily on site, the chain went looking for a braising skillet. The choice: a 15-gal. electric tilting skillet that Cleveland says offers a high-efficiency heating system with even heat distribution, thanks to heating elements cast into the aluminum pan bottom. Model SET-15 provides adjustable temps from 175°F to 425°F, fast heat and recovery times, and easy tilting. Construction is all stainless, and the unit is UL and NSF approved. Can be mounted on a stand or tabletop.
SMART FRYERS GET THE NOD
Computer-controlled circuitry and an instant-on feature drew the attention of Maid-Rite buyers when they saw the Pitco Solstice line of fryers. The line offers Intellifry computer control with touchpad functioning, 12-character displays for easy-to-read visuals, a solid-state integrated circuit design, and a “lifeguard” system that limits the cycling of fryer controls to prolong life. Solstice fryers come with welded tanks and an extra-smooth finish for easy cleaning. They also feature high-temp alloy s/s heat baffles that are mounted in the heat exchanger tubes to provide maximum heating and combustion efficiency.
FREEZER MAKES MORE WORK ROOM
Sporting a 2 1/2”-thick worktop with 4” removable backsplash, the Beverage-Air worktop freezer contributes additional workspace along with its freezing capabilities. Cabinets are insulated with foamed-in-place polyurethane material of 2” minimum thickness, and the refrigeration system utilizes R-134a refrigerant metered by a capillary tube system. The unit also offers front-breathing capability, thanks to grilles located below the doors, so you can place the unit anywhere, including up against a wall. Meanwhile, an interior forced-air system with high-humidity evaporator coils creates an ideal environment for food preservation, says Bev-Air.
FRY, THEN HOLD
Merco Savory says its Fried Food Holding Station makes it easy to hold fried foods crisply, thanks to its convected air holding properties, which effectively warm foods without overcooking. An internally controlled temperature of 230°F is directed over and through fried product, maintaining optimum product temps and crispness. The product tray, grease tray and dividers are easily removed for cleaning, and solid stainless construction provides durability. Choose from two models with lighted on/of switches.
BAKE AND PROOF IN TIGHT FOOTPRINT
When Maid-Rite kitchen planners made equipment selections for onsite baking, they went with several items from Piper Products, including the OP-3 oven-proofer. Standing in just 8 sq. ft. of floor space, the OP-3’s oven decks are each individually thermostatically controlled to provide a hearth bake, and the combination of natural convection and radiant heat means your product won’t dry out, says Piper. You get full-view, heat-reflective tempered glass doors with optional cool-touch technology, and a high-volume blower in the proofer that circulates heat and humidity. Capacity is three pans in the oven and nine pans in the proofer. Other features: positive magnetic door closure, 60-min. timer.
BREW TO MEET THE NEED
Bunn’s 12-cup Automatic Coffee Brewer with three lower warmers lets you keep up with coffee demand in your dining room. Model CWTF15-3 brews 3.8 gals. to 7.5 gals. of coffee per hour. While one pot brews, two rest on warmer plates, ready for serving. Features include all-stainless construction, hot water faucet and back-up pour-over feature, and SplashGuard funnel to deflect hot liquids from the hand. Footprint is 16.5”W x 17.7”D. Unit is UL listed and NSF certified.
COMPACT SIZE, HEAVY-DUTY MICROWAVING
Step up to the Panasonic NE-1258 microwave oven and you’ll be looking at a unit that provides 1200W of cooking power in a 16 5/8”W x 20”D footprint, top and bottom energy feeds, a 60-program memory and enhanced diagnostics. The UL-approved and NSF-listed NE-1258 relies on two magnetrons for its operation and accommodates one 6”-tall half-size steam table pan with cover. Other features include a Grab & Go door handle, easy-to-clean air filter, see-through oven door, removable ceiling spatter shield and digital display.
YOUR WALK-IN, YOUR WAY
The R-Series walk-in from Kolpak features seven standard panel configurations and five metal finishes. Its handle is ergonomically designed to not overlap with the door jamb, which Kolpak says eliminates misalignment difficulties. Plus a third hinge is built into the handle to add stability. A sweep gasket reduces energy leaks with an airtight seal along the door bottom, and the door perimeter, jamb and threshold are made of fiberglass reinforced plastic to resist rust, dents and scratches. Crown molding and kick plates add door protection in case of accidental impacts, and a digital temperature gauge clearly displays your walk-in’s temp. Options include structural flooring, architectural lights, built-in interior ramp and sliding door.
MIX, CHILL, SERVE
Need to shake things up—and boost the bottom line—with ice cream treats? Consider adding the Mix ’N Chill 94950 from Hamilton Beach, a unit you can use to create milkshakes and other frozen desserts. Use soft or hard ice cream and add a variety of candy mix-ins. The unit’s variable-speed control via a rotary dial lets you mix to your specifications each and every time. You get a s/s agitator designed for vertical blending and a splash shield that can be easily removed for cleaning. The unit comes standard with base, spindle, splash shield and Sure Grip feet. Dimensions are 10”W x 8 3/4”D x 25 3/4”H.; NSF and UL listed.

QUIET CUBER KEEPS ITSELF CLEAN
Designed with flexibility in mind, the Eclipse CME 686 600-lb. cuber moves the compressor and condenser out of the machine and onto the roof, leaving you a quiet, serviceable, narrow-profile unit with easy access for cleaning, says Scotsman. The 686’s modular design features a compressor pressure regulator valve that ensures optimum performance. The unit is also equipped with CM3 technology that offers Auto IQ Control System, the CM3 evaporator and a rust-free polyethylene base and food zone that’s backed by a lifetime rust warranty. The unit also features ReliaClean, a simplified pushbutton cleaning process to help keep the machine clean. Another key to cleaning: AquaArmor, which uses AgIon, a silver-based antimicrobial, to reduce the growth of bacteria, mold, algae, etc. Footprint of the 686 is 22”W x 16 1/2”D.

SERVE CARB AND NONCARB TOGETHER
Draw your customers to six, eight or 10 drink options with the illuminated graphics of the Enduro 250 ice drink dispenser. A coldplate-to-valve manifolding design allows you to serve any combination of carbonated or noncarbonated flavors. Meanwhile, an ice dispensing system with positive shut-off provides excellent ice targeting, says Cornelius. Unit accepts top-mount cubers with manual ice fill capability, and the modular design of Enduro allows for easy component access from the front. Choose from UF-1 sanitary levers or pushbutton valves.
