MAKING THE SWITCH TO BRAISING
When Maid-Rite switched from pre-cooked, rethermed ground
beef for its signature loose meat sandwiches to beef
prepared daily on site, the chain went looking for a
braising skillet. The choice: a 15-gal. electric tilting
skillet that Cleveland says offers a high-efficiency heating
system with even heat distribution, thanks to heating
elements cast into the aluminum pan bottom. Model SET-15
provides adjustable temps from 175°F
to 425°F, fast heat and recovery
times, and easy tilting. Construction is all stainless, and
the unit is UL and NSF approved. Can be mounted on a stand
or tabletop.

SMART FRYERS GET THE NOD
Computer-controlled circuitry and an instant-on feature drew
the attention of Maid-Rite buyers when they saw the Pitco
Solstice line of fryers. The line offers Intellifry computer
control with touchpad functioning, 12-character displays for
easy-to-read visuals, a solid-state integrated circuit
design, and a “lifeguard” system that limits the cycling of
fryer controls to prolong life. Solstice fryers come with
welded tanks and an extra-smooth finish for easy cleaning.
They also feature high-temp alloy s/s heat baffles that are
mounted in the heat exchanger tubes to provide maximum
heating and combustion efficiency.

FREEZER MAKES MORE WORK ROOM
Sporting a 2 1/2”-thick worktop with 4” removable backsplash, the
Beverage-Air worktop freezer contributes additional
workspace along with its freezing capabilities. Cabinets are
insulated with foamed-in-place polyurethane material of 2”
minimum thickness, and the refrigeration system utilizes
R-134a refrigerant metered by a capillary tube system. The
unit also offers front-breathing capability, thanks to
grilles located below the doors, so you can place the unit
anywhere, including up against a wall. Meanwhile, an
interior forced-air system with high-humidity evaporator
coils creates an ideal environment for food preservation,

FRY, THEN HOLD
Merco Savory says its Fried Food Holding Station makes it
easy to hold fried foods crisply, thanks to its convected
air holding properties, which effectively warm foods without
overcooking. An internally controlled temperature of 230°F
is directed over and through fried product, maintaining
optimum product temps and crispness. The product tray,
grease tray and dividers are easily removed for cleaning,
and solid stainless construction provides durability. Choose
from two models with lighted on/of switches.

BAKE AND PROOF IN TIGHT FOOTPRINT
When Maid-Rite kitchen planners made equipment selections
for onsite baking, they went with several items from Piper
Products, including the OP-3 oven-proofer. Standing in just
8 sq. ft. of floor space, the OP-3’s oven decks are each
individually thermostatically controlled to provide a hearth
bake, and the combination of natural convection and radiant
heat means your product won’t dry out, says Piper. You get
full-view, heat-reflective tempered glass doors with
optional cool-touch technology, and a high-volume blower in
the proofer that circulates heat and humidity. Capacity is
three pans in the oven and nine pans in the proofer. Other
features: positive magnetic door closure, 60-min. timer.

BREW TO MEET THE NEED
Bunn’s 12-cup Automatic Coffee Brewer with three lower
warmers lets you keep up with coffee demand in your dining

The R-Series walk-in from Kolpak features seven standard
panel configurations and five metal finishes. Its handle is
ergonomically designed to not overlap with the door jamb,
which Kolpak says eliminates misalignment difficulties. Plus
a third hinge is built into the handle to add stability. A
sweep gasket reduces energy leaks with an airtight seal
along the door bottom, and the door perimeter, jamb and
