Introduced in July 2006, the HurriChill AP20BCF175-3 blast chiller/shock freezer from American Panel Corp. is a fully self-contained, air-cooled unit capable of accepting a full-size pan rack. The unit is UL listed to chill 200 lbs. of product from 160°F to 38°F in 90 mins. or less. American Panel says the advanced refrigeration design and control system save energy and speed operation by incorporating a single condensing unit, which performs the soft chill, hard chill or shock freeze cycles plus the holding feature in either an automatic or manual mode. Randell’s Blast Chiller offers a unique Laminar airflow design that provides superior cooling by ducting air left to right over the product at a lower velocity. Randell says this provides more surface contact and helps minimize turbulence in the cabinet. The advantage is the product does not dry out, and this gives you the flexibility to use pans with or without the covers while cooling.
