APP OF THE MONTH
If you’re relying on staffers to physically record temperatures inside cold units, take a look at Versid Inc.’s Assure Wireless Remote Monitoring System, featuring Disney SyncLink Technology. The system automatically takes and logs temperatures inside cold units at predetermined intervals around the clock. If temperatures rise or fall out of the safe range, the system issues alerts by text message, voicemail or email, allowing you the chance to make a timely intervention. The system works using temperature sensors that transmit data to a receiver with an Ethernet connection. The receiver transfers data to a secure cloud-based, hosted server. Authorized individuals log onto the website from a computer or mobile device to access the data and reports, such as daily temperature summaries and trend analysis. Unlike other monitoring solutions, the Versid Assure system can go beyond analyzing ambient temperatures and actually calculate food-product temperatures using unique product-simulation algorithms. Product simulation meets American Society of Heating, Refrigerating and Air-Conditioning Engineers requirements. Another feature is the Intelligent Data Analysis, which determines the significance of data collected from your operation and issues only meaningful alerts. The system won’t send unnecessary alerts during defrost cycles or routine deliveries.

FRESH BREW IN VIEW
The ALP3GT Brewing System with FreshTrac technology helps keep coffee service fresh. FreshTrac features a flashing, visual indicator to monitor coffee freshness from the start of brewing. FreshTrac starts timing at the moment the brew cycle begins. Freshness settings, which can range from 10-120 min., are transmitted to the FreshTrac receiver that conveniently snaps on to any Curtis decanter handle. Once the desired freshness time has expired, the indicator begins flashing red every 5 sec. until a new pot is brewed. The visual alarm is fully automatic and dishwasher safe.

CHARBROILED TO PERFECTION
Vollrath’s Cayenne series heavy-duty charbroilers are solidly built and feature versatile grill plates. One side features narrow grills and channels specially designed to drain excess fat, reducing smoke and flames. The flip side features flatter, wider grills, which are ideal for fish and other delicate items. Adaptor bars enable the grill plates to angle up and away from heat for slower cooking. This directs grease to the run-off trough to minimize flare-ups. Burners, placed every 6 in., deliver 40,000 Btu per 12 in. of cooking surface. Available in 5 models from 24- to 72-in. wide.
