U.K.’s Las Iguanas Makes Big Plans

Citing the United Kingdom’s increasingly adventurous palates and growing appetite for Latin American food, Bristol-based Las Iguanas has ambitions to open 100 units across the country. The chain serves a Latin American menu with Indian, Spanish, Portuguese and African influences in 39 restaurants across England, Scotland and Wales.

Four new outlets are due to open by March. In the second half of 2014, the chain opened nine new restaurants. Las Iguanas is backed by private equity firm Bowmark Capital, which took control of the business in 2007 as part of a £27 million (US $41 million) deal.
