Alto-Shaam Acquires New Oven Technology From Appliance Innovation

Alto-Shaam Inc., Menomonee Falls, Wis., has purchased the technology of the Vector Series Multi-Cook Oven from Appliance Innovation, the Dallas-based company headed by Phil McKee. The acquisition of the intellectual property for the oven was finalized on Jan. 20.

Under terms the deal, Alto-Shaam will commercialize the oven series, which features Structured Air Technology, while continuing to work in partnership with Appliance Innovations to develop and evolve the technology and ovens. The two companies introduced the  technology at the recently concluded NAFEM Show in Orlando. The ovens will be manufactured at Alto-Shaam’s factory in Menomonee Falls.

“Alto-Shaam is always looking for opportunities to provide innovative products that meet our customers’ needs,” said Steve Maahs, Alto-Shaam president and COO. “We’re excited about this new partnership that allows us to provide truly game-changing technology to the market.”

Appliance Innovation, under McKee’s leadership, has developed a number of innovative cooking technologies including rapid cook technology in TurboChef, now owned by Middleby Corp., planar plume technology in MerryChef, part of Welbilt Inc., and precision impingement technology in Ovention, which is owned by Hatco Corp.

The Vector ovens feature individual oven chambers which are invidually controlled for temperature, fan speed and time, allowing operators to cook multiple menu items with no flavor transfer. The technology has as much as two times the throughput of traditional convection ovens, according to the companies, uses no microwaves or water and is ventless.
