Pizza Prep Tables
The typically raised, angled refrigerated rail holding ingredient pans on pizza prep tables makes them ideal for assembling pizzas. Dispersing toppings onto pizza crusts is easy, and a deep prep area of 14 inches to 19 inches, with cutting board, provides enough room to prep extra large pies. (Sandwich prep tables, on the other hand, have a flat top surface and shallower prep/cutting board area of 8 inches or 9 inches. So while pizza prep tables also work well for burrito, salad or deli prep, the reverse is not true.)

Arctic Air has introduced a 94-in.W, three-door pizza prep table. Models measuring 48-in.W and 71-in.W also are available. The tables feature an air-over design in the raised rail portion. A self-contained capillary tube system uses R290 hydrocarbon refrigerant. Other highlights include full-length 5/8-in.-thick cutting board, stainless construction on the front and sides of the cabinet’s exterior and an electronic thermostat with external digital LED display for accurate control and easy reading.
Beverage-Air deli/pizza prep tables come standard with field-reversible doors or 6-in.-pan-capacity drawer options configurable to user needs, as well as the option of switching the compressor to either side as required. These raised-rail units use a R290 refrigeration system to comply with environmental concerns and energy standards, as well as an adaptive defrost for optimal performance. Stainless front, sides, top, door, drawers and grille all come standard, with options for stainless back and interior, clear rail lids and composite cutting boards.
