Red Robin Tests Delivery-Only Concept

The Greenwood Village, Colo., casual-dining chain is hitting pause on its growth this year, halting future openings and turning its focus inward for 18 to 24 months. That focus includes a new kind of nest for Red Robin, which has debuted its first delivery-only test concept in downtown Chicago. Red Robin’s Express test store will operate without a traditional storefront and take online delivery and catering orders for a menu comprised of many of the brand’s signature items. The concept took over one of the chain’s 12 closed Burger Works; in fall 2016, Red Robin shuttered nine of the units and rebranded three others as Red Robin Express.
