Brinker Int’l. Names New Senior Vice President
The individual also will serve as the president of Maggiano's Little Italy, working to grow the brand.
Dominique Bertolone may now reside far from his native Monaco, but he says his new job will bring him closer to components of his Italian roots.
As the SVP of Brinker Int’l. and president of Maggiano’s Little Italy, the 20-plus year industry veteran says he will be able to blend his passions for “amazing people, team culture, food, drinks and guest service standards.” He will be charged with leading and growing the Maggiano’s brand and will serve as a member of Brinker’s executive leadership team.
Bertolone most recently worked as the senior vice president of food and beverage strategy and development at MGM Resorts Int’l. in Las Vegas, where he oversaw strategy development and execution around the company’s portfolio of restaurants, bars, lounges and nightlife venues. Before moving into corporate leadership, he worked at Bellagio Resort & Casino for 15 years.
Prior to that, he worked at the SBM Hospitality Group in Monaco, where he held roles in palaces and resorts including Hotel de Paris, Monte Carlo Beach, Monte Carlo Golf Club and Palais Princier de Monaco.

Brinker Int’l., based in Dallas, is the parent company of Chili’s Grill & Bar, Maggiano’s Little Italy and the virtual brand It’s Just Wings. It owns, operates or franchises more than 1,600 restaurants in 30 countries and two U.S. territories. Maggiano’s currently has 52 restaurants nationwide.
