Cooper’s Hawk Fills Chief Restaurant Officer Role

Beth Scott, the former president of Bloomin’ Brands’ Fleming’s Prime Steakhouse and Wine Bar, is pouring her talent into a new role: chief restaurant officer of Cooper’s Hawk Winery & Restaurants.

Scott will lead the operation of more than 45 Cooper’s Hawk restaurants while also overseeing 6,000 employees, supporting the growth of new restaurants and improving operational efficiency.

Before Bloomin’ Brands, Scott led food and beverage experience planning and integration at Disney Parks & Resorts. She also has held senior positions with Hilton Hotels & Resorts, Loews Hotels, Todd English’s Olive Group, and House of Blues Entertainment Group, and she serves as a board member for the National Restaurant Association. Further, she actively advocates for advancing opportunities for women in the industry through speaking engagements and more.

Cooper’s Hawk, a modern casual restaurant and tasting room, has nearly 500,000 Wine Club members across its 10-state footprint.
