The eating and drinking destination Time Out Market has appointed Jay Coldren to the newly created role of COO of the Americas.

Coldren has spent more than 30 years in the hospitality industry, including the restaurant, boutique hotel and gourmet retail segments. Most recently, he served as the executive director of hospitality for Streetsense. In his new role with Time Out Market, he will be tasked with expanding the brand’s footprint, driving efficiency and increasing profitability across North America.

“Jay has a great understanding of the hospitality space and a proven track record of maximizing growth potential. He is joining an already successful, energetic team at the perfect time to spearhead profitable growth and operational expansion. I am confident that Jay will provide the leadership and rigor to enable us to deliver against our important strategic priorities,” says Didier Souillat, CEO of Time Out Market, in a press release.

Time Out Market got its start in 2014 in Lisbon, bringing editorially curated food, drink and cultural content together under one roof. The concept since has expanded to North America, with locations opening in five major cities—Miami, New York City, Boston, Chicago and Montreal—in 2019. This year, the brand opened a location in Dubai, and more locations are in the pipeline for cities like Porto, Abu Dhabi, and Prague.
