Portillo’s Names New Chief Operating Officer

The fast-casual brand, which currently has more than 80 restaurants across 10 states, says the addition helps support its long-term growth plans.

Next week, Portillo’s will welcome a 30-year-industry veteran among its top ranks.

Tony Darden, who most recently served as chief operating officer of 2,200-unit Jack in the Box, will now take on the same role at Portillo’s, overseeing the brand’s operational strategy and execution.

Darden has over 30 years of experience with multiunit restaurant concepts. Most recently, at Jack in the Box, he helped implement AI order-taking systems to enhance efficiency and guest experience. He also was at the helm as the brand tested out robotics. Before that, Darden served as president of Mooyah Burgers, held COO positions at Taco Bueno and Sun Holdings (the fourth largest franchisee in the U.S.), and acted as vice president of operations at Panera Bread.

Now, Portillo’s says Darden will play a pivotal role in enhancing operations as the brand expands nationwide. Amid that growth, Darden’s core responsibility will be to execute a seamless experience for guests and team members alike.

“Tony is a proven leader with an incredible ability to elevate operations while fostering innovation and building inspiring teams,” says Michael Osanloo, CEO and president. “His wealth of experience will be instrumental in scaling our iconic brand while maintaining the commitment to high quality and exceptional guest service that make Portillo’s unique.”

Portillo’s has a long-term target of operating up to 920 locations, including full-scale restaurants and alternate formats such as Portillo’s Pick-Up locations. In December, the brand will open its first “Restaurant of the Future” in Grapevine, Texas. The unit will have a smaller, more efficient design as well as kiosks and a grab-and-go area.
