App Of The Month

Ohio Presbyterian Retirement Services operates 11 continuing-care retirement communities throughout the state. They offer a range of options to meet the needs of residents in all stages of elder care, from active living to skilled nursing. The community at Swan Creek in Toledo has 34 cottage homes, 124 apartments and a main building where 45 residents receive assisted-living care on the first floor and another 32 receive skilled nursing on the second floor. Each floor needed a servery, a little cook-to-order kitchen, because the residents have difficulty traveling any distances or between floors. “Good food is so important to quality of life,” says John Andrews, corporate director of culinary & nutritional services. But the department faced a huge dilemma. “We had to be able to offer both floors the same menu, but we realized we couldn’t put a hood in the first-floor servery,” he explains. While the second floor could exhaust through the roof, putting a hood on the first floor was completely cost prohibitive. During an NRA show years ago, Andrews recalled seeing Wells-Bloomfield VCS 2000 units: compact, ventless cooking systems that scrub exhaust through a multi-stage filter. At a recent NAFEM show, he sought the company out again. “You can order them equipped with any combination of equipment below the hood—griddles, fryers, ovens, warmers, French burners—everything you need,” he says. Chef Patrick Young coordinated the dual-servery project, working with TriMark SS Kemp reps to get both kitchens installed. While the ventless kitchen cost about $15,000 more than the servery upstairs (including the cost of the second-floor hood), the extra cost was far, far below what it would have been to reconstruct the building to exhaust the first floor. “These units are a perfect solution for us,” Andrews says.
