APP OF THE MONTH
Wall-mounted draft beer dispensing systems serve as a cost-effective option, compared with custom-built beer towers, when it comes to meeting customers’ growing demand for a wide selection of craft beers. The number of faucets is only limited by the amount of wall space and the size of your walk-in cooler. To support the wall-mounted system, Perlick Corp. recently introduced Cooler Tapping Kits, containing 14 components, to connect kegs from the cooler through the wall to customer-facing, back-wall faucets. “While the through-the-wall connection is not new, the ability to order a kit with all the necessary components is,” a company spokesperson says. “Operators previously had to buy these pieces individually.” Connecting kegs through the wall to faucets eliminates the need to run and conceal long trunk lines. The through-the-wall connection doesn’t affect the beer quality; it only makes the mechanicals of dispensing systems easier and often less expensive to install and maintain. Used with air-cooled systems, the Cooler Tapping Kits are available in 50 different configurations, depending on the total wall thickness (ranging from 0-in. to 9-in.) and number of faucets. Be sure to include all materials, such as drywall, stone or brick, when measuring wall thickness. The hardware components work for many domestic and imported beers pressured through straight CO2. perlick.com
SPACE-SAVING BLAST CHILLER
Thermo-Kool’s TK3C-2 blast chiller/shock freezer relies on 3 independent cavities to blast chill or shock freeze multiple products at the same time. The model holds 11 full-size food pans up to 2½-in.D. It blast chills up to 133 lb. of product from 165°F to 37°F within 2 hr. (29 lb. for each of the top cavities and 75 lb. for the bottom cavity) and shock freezes up to 95 lb. of product from 165°F to 0°F within 4 hr. (20 lb. for each of the top cavities and 55 lb. for the bottom cavity). The unit has 3 self-contained, air-cooled refrigeration systems, using R-404A refrigerant, complete with all required controls and accessories. The TK3C-2 measures 54-in.W x 32½-in.D x 74¾-in.H.
LESS SCRAMBLING FOR EGGS
With Eagle’s refrigerated egg station, you no longer have to scramble around the kitchen for eggs. Constructed of stainless, the station houses an egg compartment with a removable egg basket, which holds up to 5 egg flats (30 eggs per flat, 150 eggs total), and a lift-up door that conveniently stays open. Heat shields on each side of the station allow you to place the unit on a cookline; you can easily remove the shields for cleaning. Features include an automatic defrost system, electronic thermostatic control and foamed-in-place insulation. Remove the filter on the condenser for easy cleaning. Choose between a drop-in unit, measuring 22-in.W x 33½-in.D x 32-in.H, or a freestanding model.
CLEVER OIL MANAGEMENT
Easily swap out different filter media using this rolling, stand-alone Flexible Filter System. Rotate between stainless steel, paper or disposable carbon filters, depending on your operation’s needs. Stainless is the more economical choice while paper, the next step up, can increase the quality of fried foods. Carbon offers even more advantages, such as increased absorptive capacity and the ability to remove a high level of particulate contamination, boosting food quality and extending oil life. The Flexible Filter System is low to the ground, making it easier to use, and comes with a removable bucket to simplify cleanup. Use the system with any type or size of fryer. The equipment comes with a 1-yr., parts-and-labor warranty.
This Gala Cocktail Plate features a patented finger grip that allows guests to hold their food and drink in one hand while simultaneously eating or greeting with the other hand. Gone are the days of fumbling with cups and plates while trying to shake hands or reach for a business card. The Biodegradable Products Institute has certified the plate, made from sugarcane, as compostable. The plate fits with many sizes of glass, stemware, cans or bottles. And it works for right-handed and left-handed guests and with any finger size.
This hand sink splashguard helps bring a hand sink located near food-handling areas up to food-code compliance. Many food codes require that sinks located within 18-in. of food, food-contact surfaces or utensil-washing and storage-area surfaces be equipped with splash protection. The easy-to-install splashguard fits a hand sink that is at least 14-in.D from the wall; the backsplash must be at least 8-in.H. Choose between 3 kits—left side, right side or both left and right side. All kits include adhesive, silicone and installation instructions. Each splashguard measures 10-in.H x 14-in.D and is constructed of 18-ga. stainless.

GENIUS ICE MACHINE
The C0330 Prodigy Plus self-monitoring ice machine comes with external indicator lights that continuously communicate the unit’s operating status. The LED lights signal staff when it’s time to descale, sanitize and more. The patented WaterSense adaptive purge control reduces scale buildup, extending time between cleanings. Other features include a self-aligning front panel, giving easy access to key components; a front-located air filter that eliminates the need for side clearance; a QR code that connects you to unit-specific service information; and built-in antimicrobial protection that guards internal surfaces between cleanings. Air-cooled models are Energy Star qualified; the units save up to an estimated $493 annually. The C0330 footprint measures 30-in.W x 24-in.D x 23-in.H.
