Hidden in plain sight is one way to describe the ingenuity behind the Equipex Induc’Stone warmer, which sits underneath the countertop and heats chafing dishes through induction, leaving the top side of the counter unencumbered with electric or solid-fuel warmers. “Doing so permits the service counter to be used for other purposes during non-foodservice hours,” says Irina Mirsky-Zayas, Ph.D., V.P.-Sales and Marketing for Equipex. “At the end of the foodservice session, the counter can be simply wiped down and cleaned.” The warmer can be mounted under a variety of surfaces, including natural and engineered stone, concrete or glass, without the need to change décor. When used with the complimentary Induc’Mate spacer, the unit keeps water in a chafing dish hot while the counter stays cool; airflow fans keep things cool under the counter. “Operators enjoy the high heating temperature of 194°F that can be achieved, keeping foods in the chafing dish at proper holding temperature,” adds Mirsky-Zayas. “In addition, the system is very efficient and cost effective to operate.” Automatic pan detection/power supply monitor, empty pan/automatic overheating detection, and capacitive touch controls make it easy to operate.

The Somat DH-100 Dehydrator system now has “Winter Mode” option that allows the unit to be located and operated in environments such as loading docks or close to an outside waste receptacle where temperatures can fall as low as 15°F. The temperature inside the dehydration chamber remains an optimal 100°F, keeping food soil from freezing during waste accumulation while equipment is idle. The unit reduces the volume and weight of food waste and compostables by a ratio of 8 to 1.

CLEAN AS A WHISTLE
Serve up the best beer pour thanks to Perlick’s drip pans with built-in rinsers that spray the inside of the glass with cold water to remove any soap residue while also reducing friction between the glass and liquid and maintaining the cold temperature of the beverage. The newly designed U431-A pressure-fed soft-serve ice cream/yogurt freezer now offers more storage capacity and safer, more-flexible dispensing. The 3 refrigerated, LED-illuminated storage drawers hold up to 6 5-gal. mix bags and lock securely in place. The recently Energy Star-certified CT PROformance Combiterm CTP20-20G 20-20 gas combi oven joins the CTP10-20G, CTP7-20E, and CTC7-20G energy-efficient models. The Model BPM-15E Eclipse braising pan has an electrically heated, 8-in.D pan with 3-in.-radiused corners and a 5/8-in.-thick stainless-clad cooking surface on an open tubular leg stand. Controls and tilt mechanism are mounted in a stainless housing, and a standard mounting bracket allows for left, right, or rear faucet mounting. The smooth-action, quick-tilting body has a manual crack tilt mechanism for precise pouring control.
