With a combination of radiant heat beneath the shelves and forced-air convection from fans above each holding zone, MercoMax holding cabinets allow operators to hold food in a ‘fresh state’ longer. Rather than relying on a timer algorithm to control heat in the cabinet, food quality benefits from an environment controlled by an actual temperature reading from inside the cabinet itself. Due to the temperature being closely monitored, the unit can respond quickly to compensate for even minor temperature changes in ambient conditions. A bright 7-in. touchscreen display, visible from across the kitchen, shows what’s being held and status.
