Roti Opens First Delivery-Only Kitchen

Part of a larger growth plan, the ghost kitchen allows Roti to serve the Atlanta area without the footprint of a traditional dine-in restaurant.

Fast-casual brand Roti Modern Mediterranean has opened its first ghost kitchen, located near its Atlanta headquarters. The ghost kitchen, offering delivery through third-party platforms, allows the brand to serve the Greater Atlanta Area without the footprint of a traditional dine-in restaurant.

“Nontraditional locations like ghost kitchens play a critical role in how we grow,” says Sara Berthen, vice president of global franchise development at Edible Brands, which acquired Roti in February 2025. “They allow us to expand strategically, test new markets, and meet today’s customers where convenience matters most, through modern, nontraditional formats.”

Post-acquisition, Roti has gained momentum across traditional and nontraditional formats. Last fall, it secured a vendor partnership at Atlanta’s Mercedes-Benz Stadium in combination with Edible, also part of the Edible Brands portfolio. Roti also launched a national franchising opportunity, targeting Michigan, Ohio, the Carolinas, Georgia, Florida and Texas.

Roti operates 17 corporate-owned locations across Chicago, Washington, D.C., and Minneapolis, along with its stadium location and now, ghost kitchen.
