Dinnerware should be more than just a food delivery system, but at the same time not distract from the fare being presented. Chef Katsuji Tanabe incorporates Oneida’s high-quality flatware and dinnerware to enhance his customers’ dining experience at the upscale Nixon Chops & Whiskey in Wittier, Calif. “The Oneida products are exactly what I need to make the best fi rst impression. They are perfect in helping round out the entire sensorial experience,” says Chef Tanabe. “After all, we eat with our eyes fi rst, and I want to put my recipes on the most appealing background.” Oneida’s dishes provide a variety of shapes, sizes and colors for Chef Tanabe to present imaginative and artistic plating. “I know the food will be fantastic because I am in control of that, but I need the perfect canvas for my food creations,” he says. “Not only do they look amazing, they are highly functional and durable.” However, the style and strength weren’t the only features that attracted him to the dinnerware. “Oneida partners with you to help bring your vision to life with their products. It is all related to the restaurant,” he adds. “Because of the wide variety of products, it’s 1-stop shopping and you can get beautiful plates, silverware, catering equipment, etc. in every price range.”
CRAFT COCKTAILS ON DRAFT
Perlick introduces the first draft system that consistently produces high-quality cocktails from kegs. A custom keg agitation feature on the Tobin Ellis Signature Draft Cocktail System corrects the common problem caused in most cocktail keg systems when ingredients settle. The game-changing system circulates cocktails in a proprietary 4-port Corny keg with mechanical NSF-certified pump. Perlick’s “Craft on Draft” technology allows operators to serve high-volume signature drinks and provide samples in a few seconds with the pull of a tap handle. Fit the system to any existing or new bar or integrate it with the Tobin Ellis Signature Cocktail Station. Key components include NSF-certified circulating pump with inline filter, install as a direct, long-draw or custom system, and 5- or 10- gal. Corny kegs with 4 connect ports for gas pressure, pump connections, and tube to draft tower.
Thermo-Kool’s new TK4700/4700HL Walk-in Monitor System observes your walk-in unit’s operation around the clock, notifying you about temperature irregularities, power failures, open doors, and more—keeping your food product inventory safe and your mind at ease. The energy-efficient, easy-to-operate system can ensure your walk-in cooler or freezer is HAACP compliant.
TECHNOLOGY EARNS PATENT
Southern Pride recently received Patent 9,930,897 from the U.S. Patent and Trademark Office for the airflow technology in its gas-fired, wood-burning, stationary rack smoker, the SRG-400. The airflow technology uses a fan in the top of the smoker to draw heat and smoke from the firebox into air channels that are on either side of the cooking chamber. These air channels have varying sized holes that create an even cooking environment. The heat and smoke from the cooking chamber is recycled back through the firebox chamber, maximizing temperature stability and smoker efficiency.
